This is a super easy recipe to make your own bars: they are great for an afternoon energy boost or for your kids lunch box.
Coconut Chocolate Bars:
- 2 cups almond flour or gluten free oat flour (I use oat flour when my kids want these for morning snack in their nut free classrooms at school)
- 2 cups pitted dates
- 1 heaping tbsp. coconut oil
- 1/2 cup coconut flakes
- 1/2 cup dark chocolate chips
Preheat oven to 350 degrees. Place all ingredients except chocolate chips in a food processor and blend until it forms a thick dough. Fold in chocolate chips. Spread into a 9X9 pan. No need to grease the bottom. Score the bars into 12 equal rectangles. Bake for approximately 20 minutes or until the edges begin to brown. Cool on a wire rack. I freeze these bars and then I can just drop them into lunch boxes as needed!
Second alternative:
Cashew/Date Bars:
- 2 cups cashews
- 2 cups dates
Prepare, cook and store the same as the Chocolate coconut bars.
